1 cup sugar
1 cup brown sugar
1 cup oil (or 1 cup plain applesauce)
3 eggs
2 c grates zucchini (press out all the water)
3 tsp vanilla
3 cups flour
1 tsp salt
1 tsp soda
3 tsp baking powder
3 tsp cinnamon
Grease and flour two loaf pans. Preheat oven to 325
Beat sugars, oil and eggs till well blended. Stir in zucchini and vanilla. Add dry ingredients and mix well.
Bake for 50-60 min
24 muffins 18 min
I made this for activity days a few years back and it is the best Zucchini Bread i have tasted. I think it is the brown sugar that make it!
